Baked Chicken with Banana Stuffing

If you are tired of the "Fried" foods and want to try something easy and delicious. Here is a recipe for Jamaican style baked chicken, with banana stuffing.

Ingredients

1 6 lb roasting chicken
1/4 cup onions, finely chopped
1/4 teaspoon poultry seasoning ( and add some dry jerk rub for a spicy island taste)
1 1/2 c ripe banana, diced
3/4 t salt
2 1/4 c soft breadcrumbs, firmly packed
1/2 c butter (or margarine ) melted


Method

Prepare chicken for roasting. Follow recipe for stuffing as set out. Put in greased uncovered roast pan in oven at 350 degrees F for about 1 1/2 hours or until done.

Jerk Barbeque Vegetables


Many people have written and asked me to feature more vegatable dishes. So I found one on "CaribbeanChoice". You actually can play with this recipe and season to taste. Enjoy.


INGREDIENTS:

  • 1 large cho-cho, cut into thin strips
  • 2 medium carrots, sliced
  • 2 cloves garlic, finely chopped
  • 1 medium onion, finely chopped
  • 2 Tbsps. vegetable oil
  • 1/2 pack spaghetti
  • 1 medium broccoli, broken in florets
  • 1 medium cabbage, coarsely shredded
  • 1/4 tsp. salt
  • 1/4 cup GRACE JERK BARBECUE SAUCE

METHOD / DIRECTIONS:

  1. Boil spaghetti as directed on package.
  2. Heat oil and sauté seasonings.
  3. Add carrots, cho-cho and stir fry for 2 minutes.
  4. Add broccoli, cabbage and spaghetti and continue stir frying for another 2 minutes.
  5. Sprinkle with salt if desired, toss in Grace Jerk Barbecue Sauce and remove from heat.
  6. Serve immediately.

jamaican jerk chicken

Okay, Jerk Chicken is a Jamaican delicacy. You can actually jerk anything, chicken, pork, shrimp and the list goes on.
The secret is of course in the Jerk Sauce.

One of the main ingredients being the "allspice berries." (pimento). The combination with the nutmeg, cinnamon, and other spices really bring out the flavor in the meat. The chicken above is a Jamaican chicken, which has an interesting breast structure.

This is a typical barbecue jerk pit. No little barbecue grill for a typical Jamaicans.


Jamaican Jerk Chicken Recipe

  • 1 tablespoon Ground allspice
  • 1 tablespoon Dried Thyme
  • 1 1/2 teaspoons Cayenne pepper
  • 1 1/2 teaspoons Freshly ground black pepper
  • 1 1/2 teaspoons Ground sage
  • 3/4 teaspoon Ground nutmeg
  • 3/4 teaspoon Ground cinnamon
  • 2 tablespoons Garlic powder or fresh
  • 1 tablespoon Sugar
  • 1/4 cup Olive Oil
  • 1/4 cup Soy sauce
  • 3/4 cup White Vinegar
  • 1/2 cup Orange juice
  • 1 Lime juice
  • 1 Scotch bonnet pepper (habanero)
  • 3 Green onions -- finely chopped
  • 1 cup Onion -- finely chopped
  • 4 to 6 chicken breasts
