Baked Cho Cho or Chayote


The Chayote or Cho Cho is a member of the gourd or Squash family. In Jamaica this is used in many different soups or served alongside yams. Here is a simple tasty alternative use for Cho Cho. In the recipe below make sure you soak the saltfish overnight, so so the dish is not so salty. Then you won't need to boil it too much.

INGREDIENTS:
  • 3 medium cho-choes
  • 8 ozs. (225 grams) saltfish, boiled and flaked
  • 1/3 cup mayonnaise
  • 1/3 cup celery, chopped
  • 1 Tbsp. green pepper, chopped
  • 1 Tbsp. parsley, chopped
  • 1 Tbsp. onion, chopped
  • 1 cup breadcrumbs

METHOD / DIRECTIONS:

  1. Preheat oven to 350°F / 220°C.
  2. Pare cho-choes, cut length- wise into halves, remove core
  3. Par-boil for 5 minutes in water.
  4. Drain cho-choes and remove flesh until a hollow is created in the centre.
  5. Combine cho-choes, saltfish, mayonnaise, chopped celery, green pepper, parsley and onion.
  6. Return mixture to cho-cho cases.
  7. Sprinkle with breadcrumbs.
  8. Bake until done.
