Red Stripe Beer Chicken

Boy, nothing like the taste of Red Stripe Beer and some nice brown stew Chicken and rice and peas. But did you know that Red Stripe Beer an coconut milk has its own distinct flavor. Here is a recipe that gives bears testimony to that.

3 tablespoons oil
1 large chicken cut up into serving pieces
2 cups coconut milk
1 cup beer (red stripe)
1 onion diced
1 large green bell pepper, (take out the seeds and mince it)
Salt and freshly ground (if you have it) black pepper

Directions.

  • Heat the oil in large skillet over medium heat and brown the chicken on both sides. Remove the chicken and pour off all but 2 tablespoons of the oil. Return the chicken to the skillet and add coconut milk and beer. Bring to a boil, reduce the heat, cover and simmer until tender.
  • Then add onions and the bell pepper, season with salt and pepper. Simmer uncovered until the liquid is gravy (15 minutes tops)
  • If the liquid is gone before the chicken is finished, add more beer.
This dish can be served with steam rice or rice and peas. (takes about 1 hour to cook)
