Jamaica Carrot Cake















Fresh Carrot Cake is so good! When you eat Jamaican carrot you can tell the difference. It is just a sweet, natural flavor. Here is a wonderful recipe for Homemade Carrot Cake.


INGREDIENTS

½ cup flour
1 cup mixed fruits
1¾ cup grated carrots
1 tsp baking powder
1 tsp baking soda
¼ tsp allspice
¼ tsp ground cinnamon
¼ tsp ground nutmeg
½ tsp salt
1½ cup granulated sugar.
¼ cup brown sugar
5 large eggs beaten
½ cup vegetable oil

PREPARATION

Preheat oven to 350ºF for 45-55 minutes.
Grease and line pan and set aside and place carrots in a large bowl.
In a separate bowl, place carrots in mixing bowl.
Place eggs and oil then add dry ingredients and mix adding carrots and mix.
Add mixed fruits.
Bake at 350ºF for 45-55 minutes.

mmmmm Carrot Cake, I will walk downtown eating carrot cake for breakfast.. people looking at me lol lol. I can eat this without any icening.
